- 2 cans (14 oz each) hearts of palm, drained and sliced
- 1 cup cherry tomatoes, halved
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/4 cup lime juice
- 2 tablespoons honey
- Salt and pepper to taste
Instructions

In a large bowl, combine the hearts of palm, cherry tomatoes, red onion, cilantro, and mint.

In a separate small bowl, whisk together the lime juice, honey, salt, and pepper until well combined.
