  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 bell pepper, sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup crumbled feta cheese
  • 1/4 cup chopped fresh parsley
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, cucumber, red onion, bell pepper, olives, feta cheese, and parsley.

  2. In a separate small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.

  3. Drizzle the dressing over the salad and toss to coat.

  4. Serve immediately and enjoy!
