Ingredients

  • 1.5 pounds of pork tenderloin, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves of garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 4 cups mixed salad greens
  • 1 cucumber, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 red onion, thinly sliced
  • 1/4 cup Kalamata olives
  • 1/4 cup crumbled feta cheese
  • 1 cup cooked rice

Instructions

  1. In a bowl, combine the olive oil, lemon juice, garlic, oregano, thyme, salt, and black pepper. Add the pork cubes and toss to coat. Marinate in the refrigerator for at least 1 hour.

  2. Preheat a grill or grill pan over medium-high heat. Thread the marinated pork cubes onto skewers and grill for about 10-12 minutes, turning occasionally, until cooked through.

  3. In a large bowl, combine the salad greens, cucumber, cherry tomatoes, red onion, Kalamata olives, and feta cheese. Toss with your favorite Greek salad dressing.

  4. Serve the grilled pork skewers with the Greek salad and cooked rice.
