Chicken Avocado Caprese Salad Recipe

How To Make Chicken Avocado Caprese Salad

This Caprese salad has pieces of seared chicken, creamy avocados, mozzarella, and tomatoes tossed in a balsamic vinegar dressing.C

Preparation: 5 minutes
Cooking: 15 minutes
Total: 20 minutes



For Marinade/Dressing:

  • ¼cupbalsamic vinegar
  • 2tbspolive oil
  • 2tspbrown sugar
  • 1tspgarlic,minced
  • 1tspdried basil
  • 1tspsalt

For Salad:

  • 4chicken thigh fillets,skin removed, no bone
  • 5cupsRomaine lettuce leaves,or cos, washed and dried
  • 1avocado,sliced
  • 1cupcherry tomatoes,or grape, sliced
  • ½cupmini mozzarella,or bocconcini cheese balls
  • ¼cupbasil leaves,thinly sliced
  • salt and pepper,to season



  1. Whisk marinade ingredients together to combine.


  1. Place chicken into a shallow dish; pour 4 tablespoons of the dressing/marinade onto the chicken and stir around to evenly coat chicken. Reserve the untouched marinade to use as a dressing.

  2. Heat about 1 teaspoon of oil in a large grill pan or skillet over medium-high heat and grill or sear chicken fillets on each side until golden, crispy and cooked through.

  3. Once chicken is cooked, set aside and allow to rest.

To Assemble:

  1. Slice chicken into strips and prepare salad with lettuce, avocado slices, tomatoes, mozzarella cheese and chicken.

  2. Top with basil strips; drizzle with the remaining dressing; season with salt and pepper; serve.
