- 1.5 lbs baby potatoes
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh parsley, for garnish
Instructions

Preheat the oven to 425°F (220°C).

Wash and dry the baby potatoes.

In a large bowl, toss the potatoes with olive oil, garlic powder, dried rosemary, salt, and black pepper until well coated.

Transfer the potatoes to a baking sheet and spread them out in a single layer.

Roast in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy on the outside and tender on the inside.
