How To Make Italian Potato Salad

Ingredients
- 1 ½ pounds of baby potatoes, halved
- 2 cloves of garlic, minced
- ¼ cup of extra virgin olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of Dijon mustard
- ½ teaspoon of dried oregano
- ½ teaspoon of dried basil
- ¼ teaspoon of salt
- ¼ teaspoon of black pepper
- ¼ cup of chopped fresh parsley
- ¼ cup of sliced black olives
- ¼ cup of diced red onion
- ¼ cup of diced roasted red peppers
Instructions

Place the halved baby potatoes in a large pot and cover with water. Add a pinch of salt to the pot and bring to a boil. Cook for about 10-15 minutes, or until the potatoes are tender.

While the potatoes are cooking, prepare the dressing. In a small bowl, whisk together the minced garlic, olive oil, red wine vinegar, Dijon mustard, dried oregano, dried basil, salt, and black pepper.

Once the potatoes are cooked, drain them and transfer them to a large bowl. Pour the dressing over the warm potatoes and gently toss until all the potatoes are coated.

Add the chopped parsley, black olives, diced red onion, and diced roasted red peppers to the bowl. Gently toss until all the ingredients are well combined.

Serve the Italian potato salad warm or chilled. It can be enjoyed as a side dish or as a light lunch.
