How To Make Herbed Potato Salad

Ingredients
- 1 pound of baby potatoes
- 1/4 cup of chopped fresh herbs (such as parsley, dill, and chives)
- 1/4 cup of olive oil
- 2 tablespoons of lemon juice
- 2 tablespoons of dijon mustard
- Salt and pepper to taste
Instructions

Boil the baby potatoes in a pot of salted water until tender, about 15-20 minutes. Drain and let cool.

Cut the cooled potatoes into bite-sized pieces and place in a large mixing bowl.
