How To Make Oven Roasted Rosemary Smashed Potatoes

Rosemary brings a strong and fragrant flavor to these oven-roasted crunchy smashed potatoes. Serve this as a side dish during lunch or dinner.

Ingredients

  • 2lbsbaby potatoes
  • 3tbspolive oil
  • 1tspfresh rosemary
  • salt and pepper,to taste

For Toppings:

  • sour cream
  • chives
  • bacon bits

Instructions

  1. Preheat oven to 450 degrees F. Line a large baking pan with foil.

  2. Wash potatoes and boil on high for 12 to 15 minutes or just until slightly tender. Drain and cool slightly.

  3. Smash to ½-inch thickness using the heel of your hand or a glass.

  4. Line a pan with foil. Very generously brush each potato with olive oil. Slightly crush the rosemary. Sprinkle with rosemary, salt and pepper.

  5. Roast potatoes in the oven 30 to 40 minutes, flipping after 20 minutes or until browned and crispy.

  6. Serve with toppings as desired.
