How To Make Roasted Goose Recipe

Ingredients

  • 1 whole goose, about 5 kg
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 small onion, quartered
  • 2 garlic cloves, smashed
  • 1 sprig of rosemary
  • 1 sprig of thyme
  • 2 cups of chicken broth

Instructions

  1. Preheat oven to 350°F.

  2. Remove giblets and neck from goose. Trim excess fat and prick skin all over with a fork.

  3. Season inside and outside of goose with salt and pepper.

  4. Stuff the onion, garlic, rosemary, and thyme into the cavity.

  5. Place the goose, breast side up, on a rack in a roasting pan. Pour chicken broth into the pan.

  6. Roast in the oven for 3 hours or until internal temperature reaches 165°F.

  7. Let the goose rest for 15 minutes before carving.
