Ingredients

  • 2 cups of rice
  • 4 cups of vegetable broth
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 8 ounces of mushrooms, sliced
  • 2 tablespoons of olive oil
  • 1 teaspoon of soy sauce
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic and cook until fragrant and translucent.

  2. Add the mushrooms and cook until they release their moisture and start to brown.

  3. Add the rice and stir to coat in the oil and mushrooms.

  4. Pour in the vegetable broth and soy sauce and bring to a boil. Reduce the heat to low, cover the pot, and let simmer for about 15-20 minutes, or until the rice is fully cooked and the liquid is absorbed.

  5. Fluff the rice with a fork and season with salt and pepper to taste.

  6. Serve the mushroom rice hot, garnished with fresh parsley.
