How To Make The Ritz-Carlton’s Mushroom Risotto Recipe

Creamy and savory, this mushroom risotto is a classic Italian dish.

Serves:

Ingredients

  • 6 cups chicken broth
  • 3 tbsp unsalted butter
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 1/2 cups Arborio rice
  • 1/2 cup white wine
  • 1 cup sliced mushrooms
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste

Instructions

  1. In a medium saucepan, bring the broth to a simmer over medium-low heat.

  2. In a large saucepan, melt the butter over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

  3. Add the rice and stir for about 2 minutes until the rice is coated with the butter.

  4. Add the white wine and stir until it has been absorbed.

  5. Add the mushrooms and begin adding the broth, 1/2 cup at a time, stirring constantly and waiting until each addition has been absorbed before adding more.

  6. When the rice is cooked, add the Parmesan cheese and stir. Season with salt and pepper to taste.
