How To Make Wild Mushroom Risotto

Ingredients
- 1 cup wild mushrooms, sliced (such as porcini, shiitake, or oyster)
- 2 tablespoons olive oil
- 1 onion, finely diced
- 2 cloves of garlic, minced
- 1 cup Arborio rice
- 1/2 cup dry white wine
- 4 cups vegetable broth
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large skillet, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

Add the sliced mushrooms and cook until they release their moisture and become golden brown.

Stir in the Arborio rice and cook for a minute, stirring constantly, until the rice is coated in the oil and starting to turn translucent.

Pour in the white wine and cook until it is absorbed by the rice.

Begin adding the vegetable broth, one ladleful at a time, stirring constantly and allowing the rice to absorb the liquid before adding more.

Continue this process until the rice is cooked al dente and creamy, which should take about 20-25 minutes.

Stir in the grated Parmesan cheese and season with salt and pepper to taste.
