  • 2 cups of cooked rice
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tablespoon of curry powder
  • 1 teaspoon of cumin powder
  • 1 teaspoon of turmeric powder
  • 1 teaspoon of paprika
  • 1 cup of mixed vegetables (carrots, peas, corn)
  • 1 cup of chicken or vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish


  1. Heat oil in a large skillet or wok over medium heat.

  2. Add the diced onion and minced garlic and sauté until fragrant and translucent.

  3. Add the curry powder, cumin powder, turmeric powder, and paprika. Stir well to coat the onions and garlic with the spices.

  4. Add the mixed vegetables and stir-fry for 2-3 minutes until they start to soften.

  5. Add the cooked rice to the skillet and toss well to combine with the vegetables and spices.

  6. Pour in the chicken or vegetable broth and bring to a simmer. Cook for 5-7 minutes until the rice is heated through and the flavors have melded together.

  7. Season with salt and pepper to taste.

  8. Serve the curry rice hot, garnished with fresh cilantro.
