In a large bowl, mix together soy sauce, olive oil, lemon juice, minced garlic, honey, rosemary, thyme, salt, and pepper.
Add chicken thighs to the marinade and toss to coat. Let marinate for at least 30 minutes, or up to overnight in the refrigerator.
