Ingredients

  • 2 cups grated carrots
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • Whipped cream, for serving (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a 9-inch pie dish.

  2. In a large mixing bowl, combine the grated carrots, flour, sugar, melted butter, eggs, vanilla extract, baking powder, ground cinnamon, and salt. Mix well until all ingredients are fully incorporated.

  3. Pour the carrot mixture into the prepared pie dish and spread it evenly.

  4. Bake in the preheated oven for 45 minutes, or until the pie is golden brown and set in the center.

  5. Remove from the oven and let the pie cool for at least 10 minutes before serving.

  6. Serve the carrot pie warm or at room temperature, topped with whipped cream if desired.
