How To Make Katsu Curry Wrap

Ingredients

  • 4 chicken breasts
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • Salt and pepper, to taste
  • Vegetable oil, for frying
  • 4 large tortilla wraps
  • 1 cup cooked white rice
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1/2 cup sliced cucumber
  • curry sauce:
  • 1 tablespoon vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons curry powder
  • 1 tablespoon tomato paste
  • 1 cup chicken broth
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F).

  2. Butterfly the chicken breasts and season with salt and pepper. Dip each chicken breast in the beaten eggs, then coat with breadcrumbs.

  3. Heat vegetable oil in a large skillet over medium heat. Fry the chicken breasts until golden brown and crispy, about 3-4 minutes per side. Transfer to a baking sheet and bake for 10 minutes to ensure they are fully cooked.

  4. In the same skillet, heat vegetable oil and sauté the diced onion and minced garlic until fragrant. Add the curry powder and tomato paste, stirring well.

  5. Pour in the chicken broth, soy sauce, and honey. Bring to a simmer and let it cook for 10 minutes. Season with salt and pepper to taste.

  6. Slice the cooked chicken into strips. Warm the tortilla wraps in a separate skillet or microwave.

  7. To assemble the wraps, spread a spoonful of curry sauce onto each tortilla. Add a layer of cooked rice, shredded cabbage, julienned carrot, sliced cucumber, and sliced chicken strips.

  8. Roll up the tortilla tightly, tucking in the sides as you go. Cut each wrap in half and serve.
