Ingredients

  • 2tbspolive oil
  • ¼cuponion,finely diced
  • 1garlic clove,minced
  • 1cupchicken broth
  • ¼tspdried basil
  • 1cupcouscous
  • 2cupscherry tomatoes,halved
  • ¼cupfeta cheese
  • 1tbsplemon juice,fresh
  • 1tbspolive oil
  • 1tbspfresh parsley
  • 1tbspfresh basil

Instructions

  1. Cook the onion and garlic in oil over medium heat for about 5 to 6 minutes until tender.

  2. Add the chicken broth, basil, and a pinch of salt, then bring to a boil. Stir in the couscous, cover, remove from heat and let stand for 5 minutes.

  3. Lift the lid, then stir in the tomatoes, lemon juice and feta cheese.

  4. Garnish with fresh basil and parsley, serve, and enjoy!
