  • 2 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Cook the Israeli couscous according to package instructions and let cool.

  2. In a mixing bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.

  3. In a separate bowl, whisk together the olive oil, lemon juice, salt, and pepper to make the dressing.

  4. Add the couscous to the mixing bowl with the vegetables and mix well.

  5. Pour the dressing over the salad and toss to coat.

  6. Serve chilled.
