How To Make Spicy Chicken Couscous
Couscous is a sweet nutty grain made from semolina wheat. It used to be a North African delicacy, though it is becoming increasingly common worldwide. There are three varieties of couscous, Moroccan, Lebanese, and Israeli couscous. Moroccan couscous is the tiniest and takes a short time to cook. It is also the most widely available out of these three. Lebanese is the biggest and also requires the longest time to cook. Israeli or pearl couscous is right between Morrocan and Lenanese couscous in terms of both size and cooking time. Ingredients
- 4 chicken breasts, boneless and skinless
- 2 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 red bell pepper, diced
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp cayenne pepper (adjust according to your spice preference)
- 1 cup chicken broth
- 1 cup couscous
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
Instructions

Season the chicken breasts with salt and pepper on both sides.

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5 minutes on each side, or until they are browned and cooked through. Remove from the skillet and set aside.

In the same skillet, add the diced onion, minced garlic, and diced red bell pepper. Cook for about 5 minutes, until they are softened.

Add the paprika, cumin, and cayenne pepper to the skillet and stir well to combine with the vegetables.

Pour in the chicken broth and bring to a simmer. Return the chicken breasts to the skillet and cook for an additional 10 minutes, or until the chicken is fully cooked and the sauce has thickened slightly.

Meanwhile, prepare the couscous according to the package instructions.

Serve the spicy chicken over a bed of couscous. Garnish with fresh cilantro.
