How To Make Golden Couscous with Apricots & Crispy Onions

Couscous is a sweet nutty grain made from semolina wheat. It used to be a North African delicacy, though it is becoming increasingly common worldwide. There are three varieties of couscous, Moroccan, Lebanese, and Israeli couscous. Moroccan couscous is the tiniest and takes a short time to cook. It is also the most widely available out of these three. Lebanese is the biggest and also requires the longest time to cook. Israeli or pearl couscous is right between Morrocan and Lenanese couscous in terms of both size and cooking time. Toss this North African staple into salads or serve it as a side to a protein-packed main, you’ll never run out of ideas to cook with our couscous recipes.

Ingredients

  • 1 cup couscous
  • 1 ¼ cup vegetable broth
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • ½ cup dried apricots, chopped
  • ¼ cup golden raisins
  • ¼ cup slivered almonds
  • 2 tbsp chopped fresh parsley
  • Salt and pepper to taste

Instructions

  1. In a small pot, bring the vegetable broth to a boil. Remove from heat and stir in the couscous. Cover and let sit for 10 minutes, until the couscous has absorbed all the liquid.

  2. Fluff the couscous with a fork and set aside.

  3. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and cook until golden and crispy, stirring occasionally, for about 10 minutes.

  4. Remove the onions from the skillet and set aside on a paper towel-lined plate.

  5. In the same skillet, add the chopped apricots, raisins, and slivered almonds. Cook for 2-3 minutes, until the almonds are lightly toasted.

  6. Add the cooked couscous to the skillet and stir to combine with the apricots, raisins, and almonds. Season with salt and pepper to taste.

  7. Remove from heat and stir in the chopped fresh parsley.

  8. Serve the golden couscous topped with the crispy onions.
