Ingredients

  • 1 cup couscous
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh basil leaves, chopped
  • 1/4 cup fresh mint leaves, chopped
  • Juice of 1 lemon
  • 3 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the couscous according to package instructions. Fluff it with a fork and let it cool.

  2. In a large bowl, combine the cooked and cooled couscous, cherry tomatoes, cucumber, red onion, feta cheese, basil, and mint.

  3. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss to combine.

  4. Serve the tricolore couscous salad chilled or at room temperature.
