Ingredients

  • 3 lb chicken thighs
  • 2 tbsp oil
  • 3 tbsp curry powder
  • salt
  • 2 red onion, medium-sized
  • 1 tsp vinegar
  • 1 cup water
  • 2 tbsp cornstarch
  • ¼ cup water

Instructions

  1. Heat pressure cooker on medium heat
  2. Add oil; brown chicken. Season with combined curry powder and salt. Add onions, vinegar, and water. Make sure to sauté for 5 minutes.
  3. Close cover securely. Place pressure regulator on vent pipe. Cook 15 minutes.
  4. Cool pressure cooker at once. 
  5. Place chicken curry on a heated platter. Combine cornstarch and water. Stir into liquid in pressure cooker at once.
  6. Cook until thickened stirring constantly. Ladle sauce over chicken. Serve over hot cooked rice.
