Ingredients

  • 1 cup orzo pasta
  • 1/2 cup Kalamata olives, pitted and chopped
  • 1/2 cup English cucumber, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions

  1. Cook orzo according to package instructions. Drain and rinse with cold water.

  2. In a large bowl, combine cooked orzo, olives, cucumber, tomatoes, red onion, feta cheese, and parsley.

  3. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper. Pour dressing over salad and toss to combine.

  4. Chill salad in the refrigerator for at least 30 minutes before serving.
