A delicious Mediterranean-inspired salad made with orzo pasta, fresh vegetables, feta cheese, and a zesty lemon dressing.
Serves:
Ingredients
- 1 cup orzo pasta
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup kalamata olives, chopped
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions

Cook orzo according to package instructions, then drain and rinse with cold water.

In a large bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.

In a small bowl, whisk together the olive oil, lemon juice, honey, garlic, salt, and pepper to make the dressing.
