How To Make Kale Pesto & Chicken Gnocchi

Ingredients
- 1 lb of chicken gnocchi
- 2 cups of kale leaves, stems removed
- 1/2 cup of fresh basil leaves
- 1/4 cup of pine nuts
- 2 cloves of garlic, minced
- 1/2 cup of grated Parmesan cheese
- 1/3 cup of extra virgin olive oil
- Salt and pepper to taste
Instructions

Cook the chicken gnocchi according to package instructions. Drain and set aside.

In a food processor, combine the kale leaves, basil leaves, pine nuts, garlic, Parmesan cheese, olive oil, salt, and pepper. Blend until smooth.

Heat a large skillet over medium heat and add the kale pesto. Cook for 2-3 minutes, stirring occasionally.

Add the cooked chicken gnocchi to the skillet and toss well to coat with the pesto. Cook for an additional 2-3 minutes until heated through.

Serve the kale pesto and chicken gnocchi warm. Garnish with additional Parmesan cheese if desired.
