Ingredients

  • 1 lb of gnocchi
  • 2 cups of kale leaves, stems removed
  • 1/4 cup of grated Parmesan cheese
  • 1/4 cup of toasted pine nuts
  • 2 cloves of garlic
  • 1/4 cup of olive oil
  • Salt and pepper to taste
  • 1 cup of cooked ham, diced

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Cook the gnocchi according to package instructions. Drain and set aside.

  3. In a food processor, combine the kale, Parmesan cheese, pine nuts, garlic, olive oil, salt, and pepper. Blend until smooth.

  4. In a large bowl, mix the cooked gnocchi, kale pesto, and diced ham until well coated.

  5. Transfer the mixture to a baking dish and bake for 20-25 minutes, or until the top is golden and bubbly.

  6. Serve hot and enjoy!
