Ingredients

  • 1 lb store-bought gnocchi
  • 1 cup fresh green beans, trimmed and halved
  • 1 cup fresh parsley leaves
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup toasted pine nuts
  • 2 cloves garlic
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the gnocchi according to package instructions. Drain and set aside.

  2. Bring a pot of salted water to a boil. Blanch the green beans for 2 minutes, then transfer to an ice bath to cool. Drain and set aside.

  3. In a food processor, combine the parsley, Parmesan cheese, pine nuts, garlic, olive oil, salt, and pepper. Blend until smooth.

  4. In a large pan, heat some olive oil over medium heat. Add the gnocchi and green beans, then pour in the pesto sauce. Cook for 2-3 minutes, stirring frequently, until everything is well coated and heated through.

  5. Serve the gnocchi with an extra sprinkle of Parmesan cheese and some fresh parsley leaves.
