How To Make Green Bean Parsley Pesto Gnocchi

Ingredients
- 1 lb store-bought gnocchi
- 1 cup fresh green beans, trimmed and halved
- 1 cup fresh parsley leaves
- 1/4 cup grated Parmesan cheese
- 1/4 cup toasted pine nuts
- 2 cloves garlic
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions

Cook the gnocchi according to package instructions. Drain and set aside.

Bring a pot of salted water to a boil. Blanch the green beans for 2 minutes, then transfer to an ice bath to cool. Drain and set aside.

In a food processor, combine the parsley, Parmesan cheese, pine nuts, garlic, olive oil, salt, and pepper. Blend until smooth.

In a large pan, heat some olive oil over medium heat. Add the gnocchi and green beans, then pour in the pesto sauce. Cook for 2-3 minutes, stirring frequently, until everything is well coated and heated through.

Serve the gnocchi with an extra sprinkle of Parmesan cheese and some fresh parsley leaves.
