How To Make Seafood, Pineapple & Coconut Kebabs

Ingredients
- 1 lb shrimp, peeled and deveined
- 1 lb scallops
- 1 lb firm white fish, cut into chunks
- 1 pineapple, peeled and cut into chunks
- 1 cup coconut milk
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey
- 1 tablespoon grated ginger
- 1 tablespoon minced garlic
- Salt and pepper to taste
- Wooden skewers, soaked in water for 30 minutes
Instructions

In a large bowl, whisk together coconut milk, soy sauce, lime juice, honey, grated ginger, minced garlic, salt, and pepper.

Thread the shrimp, scallops, fish, and pineapple onto the skewers, alternating between each ingredient.

Place the skewers in a shallow dish and pour the marinade over them, making sure to coat them evenly. Let them marinate for at least 10 minutes.

Preheat the grill to medium-high heat.

Grill the kebabs for about 2-3 minutes on each side, or until the seafood is cooked through and lightly charred.
