Serves:

Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can of chickpeas, drained and rinsed
  • 1 red bell pepper, diced
  • 1 small onion, minced
  • 3 cloves of garlic, minced
  • 1 tsp of ginger, grated
  • 1 can of coconut milk
  • 2 tbsp of tomato paste
  • 1 tbsp of curry powder
  • 1 tsp of ground cumin
  • Salt and pepper to taste
  • Fresh cilantro, chopped for serving

Instructions

  1. In the slow cooker, add in all the ingredients except the cilantro and stir to combine.

  2. Cook on high for 4-6 hours until sweet potatoes are tender.

  3. Serve hot with fresh cilantro on top.
