How To Make Quick Chickpea & Chard Tamarind Curry

- 2 tablespoons oil
- 1 onion, finely chopped
- 3 cloves of garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper (optional, for heat)
- 1 can (15 ounces) chickpeas, rinsed and drained
- 1 bunch of Swiss chard, stems removed and leaves chopped
- 2 tablespoons tamarind paste
- Salt to taste
- Fresh cilantro, for garnish
Instructions

Heat oil in a large skillet over medium heat. Add the chopped onion and cook until it becomes translucent, about 5 minutes.

Add the minced garlic, ground cumin, ground coriander, turmeric, and cayenne pepper (if desired). Cook for an additional 2 minutes, stirring constantly.

Stir in the chickpeas and chopped chard leaves. Cook for 5 minutes, until the chard wilts.

In a small bowl, mix the tamarind paste with 1/4 cup of water. Pour the tamarind mixture into the skillet and stir well.

Reduce the heat to low and simmer the curry for 10 minutes, allowing the flavors to meld together. Add salt to taste.

Serve the curry hot, garnished with fresh cilantro. Enjoy with rice or naan bread.
