Ingredients

  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 large sweet potatoes, peeled and cubed
  • 1 cup frozen peas
  • 1 can coconut milk
  • 1 cup chicken broth
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish
  • Cooked rice or naan, for serving

Instructions

  1. Heat the vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onion and minced garlic, and sauté until the onions are softened and translucent.

  2. Add the curry powder, turmeric, cumin, coriander, and paprika to the pot. Stir well to coat the onions and garlic with the spices.

  3. Add the chicken pieces to the pot and cook until browned on all sides.

  4. Add the cubed sweet potatoes, frozen peas, coconut milk, and chicken broth to the pot. Stir to combine all the ingredients.

  5. Bring the curry to a simmer, then reduce the heat to low and cover the pot. Let it cook for 20-25 minutes, or until the sweet potatoes are tender and the chicken is cooked through.

  6. Season the curry with salt and pepper to taste.

  7. Serve the chicken, sweet potato & pea curry over cooked rice or with naan bread. Garnish with fresh cilantro.
