Ingredients

  • 3 cups grated zucchini
  • 1 cup chopped red bell pepper
  • 1 cup chopped onion
  • 1 ½ cups white sugar
  • 1 cup apple cider vinegar
  • 1 tablespoon mustard seeds
  • 1 teaspoon celery seeds
  • 1 teaspoon turmeric
  • 1 teaspoon salt

Instructions

  1. In a large pot, combine the grated zucchini, chopped red bell pepper, and chopped onion.

  2. Add the white sugar, apple cider vinegar, mustard seeds, celery seeds, turmeric, and salt to the pot.

  3. Stir well to combine all the ingredients.

  4. Bring the mixture to a boil over medium heat, then reduce the heat to low and simmer for 45 minutes, stirring occasionally.

  5. Remove the pot from the heat and let the relish cool completely.

  6. Transfer the relish to sterilized jars and store in the refrigerator.
