  • 2 tbsp vegetable oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, peeled and sliced
  • 2 parsnips, peeled and sliced
  • 1 sweet potato, peeled and diced
  • 1 cup cauliflower florets
  • 1 cup green peas
  • 1 can coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • Salt, to taste
  • 1 cup Greek yogurt
  • 1 apple, diced
  • ½ cup raisins
  • Fresh cilantro, for garnish

Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the diced onion and minced garlic, and cook until fragrant, about 2 minutes.

  2. Add the carrots, parsnips, sweet potato, cauliflower, and green peas to the pot. Stir in the curry powder, turmeric, and salt. Cook for 5 minutes, until the vegetables are slightly tender.

  3. Pour in the coconut milk and bring the mixture to a simmer. Reduce the heat to low, cover the pot, and let it simmer for 15 minutes, until the vegetables are fully cooked and tender.

  4. While the curry is simmering, prepare the fruity raita. In a bowl, combine the Greek yogurt, diced apple, and raisins. Mix well to combine.

  5. Serve the winter vegetable curry hot, topped with a spoonful of fruity raita and a sprinkle of fresh cilantro. Enjoy!
