  • 3 cup rotisserie chicken, chopped
  • 1 cup rice, uncooked
  • 1 red bell pepper, chopped
  • handful fresh parsley, chopped
  • 1 cup Italian blend cheese, shredded
  • 30 oz. chicken broth
  • 1 can cream of chicken soup
  • 1 tsp. oregano
  • 1 tsp. basil
  • 1 clove garlic, minced
  • pepper, to taste


  1. Preheat the oven to 350 degrees.
  2. Place the chicken in the bottom of a 9x13 casserole dish.

  3. Sprinkle the chicken with red pepper, parsley, and rice.
  4. Spread the cheese over the rice and chicken evenly.
  5. In a bowl, combine the broth, chicken soup, oregano, basil, garlic, and pepper.
  6. Mix well and pour over the top of the other ingredients.
  7. Bake for 1 hour and 15 minutes.
