  • 4 boneless, skinless chicken breasts
  • 1/2 cup all-purpose flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 4 tbsp unsalted butter
  • 8 oz sliced mushrooms
  • 1/2 cup marsala wine
  • 1/2 cup chicken broth
  • Chopped fresh parsley, for garnish

Instructions

  1. Preheat the oven to 200°F and place a baking sheet in the oven.

  2. In a shallow dish, mix together the flour, salt, pepper, and oregano. Dredge each chicken breast in the seasoned flour, shaking off any excess.

  3. In a large skillet, melt the butter over medium heat. Add the chicken and cook until browned on both sides, about 3-4 minutes per side. Remove the chicken to the baking sheet in the oven.

  4. Add the sliced mushrooms to the skillet and cook until they release their liquid, about 5 minutes. Add the marsala wine and chicken broth, and bring to a simmer. Simmer until the sauce has thickened, about 10 minutes.

  5. Pour the sauce over the chicken and garnish with chopped fresh parsley before serving.
