Broccoli & Tomato Casserole Recipe

This broccoli and tomato casserole recipe is a healthy dish for the whole family. It’s a vegetarian dish but meat-eaters will enjoy it just as much too! You can even add pasta into this casserole if you want a more filling meal.

How To Make Broccoli & Tomato Casserole

  • 1 lb. broccoli florets
  • 3 large tomatoes (divided)
  • 3/4 lb. onion (diced)
  • 2 garlic cloves (minced)
  • 3/4 cup basil leaves (chopped)
  • 1/2 lb. mozzarella cheese (divided)
  • 3 large eggs
  • 1 cup cottage cheese
  • 1 lemon (juiced)
  • 3/4 cup parmesan cheese (grated, divided)
  • 2 tsp. salt
  • 1 tsp. black pepper
  1. Preheat the oven to 375 degrees.
  2. Steam the broccoli until tender and drain.

  3. Chop the tomatoes and add them to the broccoli.

  4. Stir in the onion, garlic and ½ cup of basil.

  5. Add 2/3 of the mozzarella into the mixture and stir.

  6. Transfer this vegetable mixture to a baking dish and set aside.

  7. Whisk the eggs, cottage cheese, and lemon juice together in a bowl. Add ½ cup of Parmesan.

  8. Add the cheese mixture to the vegetables. Season with salt and pepper.

  9. Scatter on the remaining mozzarella and Parmesan on top.

  10. Bake 35 minutes until the cheese has melted. Serve.
