These chorizo skewers makes the perfect little appetizers to serve at a party! It’s skewered with fresh cheese, bell peppers, and more for a tasty snack.

- 6ozManchego cheese,cut into 24 chunks
- 2red bell peppers,roasted
- 48stuffed green olives
- 8ozchorizo sausage link,cut in half lengthwise then into half circles

Instructions

Roast the red bell peppers on a grill until blackened.

Put the blackened roasted peppers in a bowl, then cover with saran wrap to let the skins loosen.

Peel off the skin, but save just a bit. Do not wash the peppers.

In a skillet, brown the sausage, them render some of the fat from it.

Skewer on the red bell pepper, Manchego cheese, chorizo, another red bell pepper, and then the stuffed green olive.
