How To Make Chorizo & Manchego Scones

- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/4 cup cold unsalted butter, diced
- 1/2 cup shredded manchego cheese
- 1/2 cup diced chorizo
- 1/4 cup chopped fresh parsley
- 1/2 cup buttermilk
- 1 large egg, beaten
Instructions

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together the all-purpose flour, whole wheat flour, baking powder, baking soda, and salt.

Add the cold butter to the flour mixture and use your fingertips to rub it in until the mixture resembles coarse crumbs.

Stir in the shredded manchego cheese, diced chorizo, and chopped parsley.

Add the buttermilk to the bowl and mix until just combined. Be careful not to overmix.

Turn the dough out onto a lightly floured surface and knead it a few times until it comes together.

Pat the dough into a 1-inch thick round and cut out scones using a round cookie cutter or a glass.

Place the scones onto the prepared baking sheet. Brush the tops with beaten egg.

Bake for 15-18 minutes, or until the scones are golden brown and cooked through.
