Ingredients
- 1 lb salmon fillet, skinless and boneless
- 1 cup breadcrumbs
- 1/4 cup milk
- 1/4 cup diced onions
- 1/4 cup diced celery
- 1/4 cup diced red bell pepper
- 2 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh parsley
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten
- 1/4 cup mayonnaise
Instructions

Preheat the oven to 375°F (190°C). Grease a loaf pan with cooking spray.

In a large bowl, flake the salmon into small pieces using a fork.

Add the breadcrumbs, milk, onions, celery, red bell pepper, dill, parsley, Dijon mustard, lemon juice, salt, black pepper, beaten eggs, and mayonnaise. Mix well to combine.

Transfer the mixture into the greased loaf pan, pressing it down evenly.

Bake in the preheated oven for 40-45 minutes, or until the salmon loaf is cooked through and golden brown on top.
