  • 1.5 kg bone-in ham
  • 1 bottle ginger beer
  • 1/2 cup tamarind pulp
  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon dijon mustard
  • 1 teaspoon ground ginger
  • 1 teaspoon ground black pepper
  • 1/2 teaspoon salt


  1. Preheat the oven to 325°F (160°C).

  2. Score the ham with a sharp knife in a diamond pattern.

  3. In a saucepan, combine the ginger beer, tamarind pulp, honey, soy sauce, dijon mustard, ground ginger, black pepper, and salt. Heat until the mixture comes to a simmer.

  4. Pour half of the ginger beer mixture over the ham, making sure it gets into all the scored cuts.

  5. Place the ham in a roasting pan and cover with aluminum foil.

  6. Bake in the preheated oven for 1 hour.

  7. Remove the foil and pour the remaining ginger beer mixture over the ham.

  8. Increase the oven temperature to 375°F (190°C) and bake for another 30-45 minutes, basting occasionally.

  9. Remove from the oven and let the ham rest for 10 minutes before slicing.

  10. Serve hot and enjoy!
