Ingredients

  • 1 lb shrimp, peeled and deveined
  • 1/4 cup tamarind pulp
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp brown sugar
  • 1 tsp garlic, minced
  • 1 tsp ginger, grated
  • 1 tsp cornstarch
  • Salt and pepper to taste
  • Rice for serving

Instructions

  1. In a small bowl, mix together the tamarind pulp, soy sauce, brown sugar, garlic, ginger, and cornstarch until well combined.

  2. Heat the vegetable oil in a large skillet over high heat.

  3. Add the shrimp and stir-fry until opaque, about 2-3 minutes.

  4. Add the tamarind sauce to the skillet and continue to stir-fry until the sauce has thickened, about 2-3 minutes more.

  5. Season with salt and pepper to taste and serve over rice.
