Easy Juicy Chicken Rolls Recipe

This chicken rolls recipe is perfect for on-the-go or potlucks! The meat is so tender and juicy, it is what really makes this dish. The creamy, cheesy spinach mixture filling adds so much flavor and a nice touch of color to the otherwise plain chicken breast.

How To Make Easy Juicy Chicken Rolls

  • 2 chicken breasts, sliced lengthwise
  • 1 tsp. garlic, minced
  • 1 tbsp olive oil
  • 2 cups spinach
  • cup mayonnaise
  • ¼ cup fresh parmesan, grated
  • ¼ cup mozzarella , shredded
  • Salt and pepper, to taste


  1. Preheat the oven to 425 degrees.
  2. Lay the chicken on a flat surface and pound it flat.
  3. In a large skillet, saute the garlic with olive oil for a few minutes.

  4. Add in the spinach and saute for a few minutes, until it begins to wilt. Remove from heat.

  5. Stir in the mayo and cheeses to make a spread.

  6. Season the chicken with salt and pepper on both sides.
  7. Spread a layer of the mayo-cheese mixture onto each chicken strip and top with the spinach.

  8. Roll up the chicken strips and place them in the oven for 25-30 minutes until cooked through.

  9. Let the chicken cool a few minutes before slicing it into rolls to serve.
