How To Make Bean Chimichangas

Make your own bean chimichangas at home with this easy-to-follow recipe. Tortillas are filled with beans, cheese, and tomatoes then baked to perfection.

Ingredients

  • 12tortillas
  • 2egg whites
  • 1canrefried beans
  • 8ozVelveeta®
  • ½canRO*TEL® Diced Tomatoes & Chiles
  • 2tbspvegetable oil
  • monterrey jack cheese

Instructions

  1. Place beans, RO*TEL®, and VELVEETA® in a pot and heat until cheese is all melted.

  2. Then warm up tortillas so they are easier to work with.

  3. Add egg whites to a bowl and mix with whisk. Add beans to the middle of your tortilla, sprinkle with cheese and then add egg whites all around the beans and fold up.

  4. To fold start with one side and fold up an inch and then fold sides and then add more egg white where the last fold is.

  5. Flash-fry chimis by placing in a pan of 2 tablespoons vegetable oil on medium heat. Heat on both sides for a minute or so. Place fried chimis back onto a pan seam-side down.

  6. After finishing flash-frying the chimis, bake at 350 degrees F for 12 to 15 minutes.
