  • 4 large flour tortillas
  • 2 cups cooked shredded chicken
  • 1 cup shredded Mexican blend cheese
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomato
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil, for frying
  • Salsa and guacamole, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine shredded chicken, cheese, onion, bell pepper, tomato, garlic, chili powder, cumin, salt, and black pepper.

  3. Place a spoonful of the chicken mixture on each tortilla, fold in the sides, and roll up tightly.

  4. Heat vegetable oil in a large skillet over medium-high heat. Fry the chimichangas until golden brown on all sides, about 2-3 minutes per side. Remove and drain on paper towels.

  5. Transfer the fried chimichangas to a baking sheet and bake for 10 minutes to ensure the filling is heated through.

  6. Serve the chicken chimichangas with salsa and guacamole on the side.
