- 4 large flour tortillas
- 2 cups cooked shredded chicken
- 1 cup shredded Mexican blend cheese
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced tomato
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil, for frying
- Salsa and guacamole, for serving

Preheat the oven to 400°F (200°C).

In a large bowl, combine shredded chicken, cheese, onion, bell pepper, tomato, garlic, chili powder, cumin, salt, and black pepper.

Place a spoonful of the chicken mixture on each tortilla, fold in the sides, and roll up tightly.

Heat vegetable oil in a large skillet over medium-high heat. Fry the chimichangas until golden brown on all sides, about 2-3 minutes per side. Remove and drain on paper towels.

Transfer the fried chimichangas to a baking sheet and bake for 10 minutes to ensure the filling is heated through.
