Serves:
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup cheddar cheese, shredded
- 4 flour tortillas
- 1/2 cup sour cream
- 1/4 cup salsa
- 1/4 cup diced green chilies
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- Vegetable oil for frying
Instructions
-
In a mixing bowl, combine the shredded chicken, cheddar cheese, salsa, diced green chilies, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
-
Lay out the flour tortillas and divide the chicken mixture equally among them, placing it in the center of each tortilla.
-
Fold the sides of the tortillas over the filling and then roll them up tightly, securing with toothpicks.
-
Heat vegetable oil in a large skillet over medium-high heat. Carefully place the chimichangas in the skillet and cook until golden brown on all sides, about 3-4 minutes per side.
-
Remove the chimichangas from the skillet and drain on paper towels to remove excess oil.
-
In a small bowl, mix together the sour cream, cumin, and salt to make the sour cream sauce.
-
Serve the chicken chimichangas hot, topped with the sour cream sauce.
