How To Make The Border Chimichangas Recipe

Serves:

Ingredients

  • 1 lb ground beef
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp garlic powder
  • salt and pepper to taste
  • 1 can refried beans
  • 1 cup shredded cheddar cheese
  • 8 large flour tortillas
  • oil for frying
  • toppings of your choice (sour cream, guacamole, salsa)

Instructions

  1. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess grease.

  2. Add the chili powder, paprika, cumin, garlic powder, salt, and pepper to the skillet and stir to combine.

  3. Stir in the refried beans and cheddar cheese until well mixed.

  4. Place a large spoonful of the beef mixture into the center of a tortilla and fold in the sides. Roll up the tortilla tightly into a burrito shape.

  5. Repeat with the remaining tortillas and beef mixture.

  6. Heat oil in a large skillet over medium-high heat.

  7. Place the chimichangas into the oil seam-side down and fry until golden brown and crispy. Flip and fry the other side.

  8. Serve hot with your favorite toppings.
