Ingredients

  • 4 flour tortillas
  • 2 cups of shredded chicken
  • 1 cup of mixed veggies (peppers, onions, tomatoes)
  • 1 cup of shredded cheese
  • 1 tsp of cumin
  • 1 tsp of chili powder
  • 1 tsp of garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Preheat oven to 375°F.

  2. In a bowl, mix shredded chicken, veggies, cheese, and spices.

  3. Heat oil in a frying pan.

  4. Warm tortillas in the microwave for 20 seconds.

  5. Place ¼ of the chicken mixture on each tortilla, fold the sides in, and roll tightly.

  6. Fry the chimichangas in hot oil until crispy and golden on all sides.

  7. Transfer the chimichangas to a baking sheet and bake for 10 minutes.

  8. Serve hot with your favorite toppings.
