  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup tomato sauce
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • Vegetable oil, for frying

Instructions

  1. In a large skillet, cook ground beef, onion, and garlic over medium heat until beef is browned and cooked through.

  2. Drain any excess fat from the skillet.

  3. Add chili powder, cumin, paprika, salt, black pepper, and tomato sauce to the skillet. Stir to combine and simmer for 5 minutes.

  4. Heat vegetable oil in a separate skillet or deep fryer to 375°F (190°C).

  5. Warm the flour tortillas in a dry skillet or microwave for a few seconds to make them pliable.

  6. Spoon the beef mixture onto each tortilla and top with a sprinkle of shredded cheese.

  7. Fold in the sides of the tortilla, then roll it up tightly to enclose the filling.

  8. Secure the edges with toothpicks.

  9. Carefully place the chimichangas into the hot oil and fry until golden and crispy, about 2-3 minutes per side.

  10. Remove from the oil and drain on a paper towel-lined plate.

  11. Serve hot with your favorite toppings such as salsa, guacamole, and sour cream.
