Ingredients

  • 1lbground beef
  • ½yellow onionchopped
  • 1green bell pepperchopped
  • 1cupbarbecue sauce
  • 15oztomato sauce
  • 2cupscheddar cheeseshredded
  • ½cupyellow cornmeal
  • ½cupwhole milk
  • ½cupflour
  • cupwhite sugar
  • ¼tspsalt
  • 1tspbaking powder
  • 1large egg
  • ¼cupunsalted butter melted

Instructions

  1. Preheat the oven to 400 degrees F.

  2. Spray a 9×9-inch baking dish with cooking spray.

  3. Combine the beef, onion and bell pepper in a large dutch oven on medium heat and cook for 5 to 6 minutes until browned, cooked through and fat has been drained.

  4. Add in the barbecue sauce and tomato sauce, then bring to a boil before reducing to a simmer for 5 minutes.

  5. Add the cornmeal, milk, flour, sugar, salt, baking powder, egg and butter to a bowl, then whisk well together.

  6. In the baking dish, layer the beef mixture then the shredded cheese before topping with the cornbread mixture.

  7. Bake for 30 to 35 minutes.

  8. Serve warm, and enjoy!
