Ingredients

  • 4 large eggs
  • 1/4 cup milk
  • 1/4 cup grated cheese (cheddar or mozzarella)
  • 1/4 cup diced vegetables (bell peppers, spinach, mushrooms, etc.)
  • Salt and pepper to taste
  • Cooking spray

Instructions

  1. Preheat the oven to 350°F (175°C) and spray a muffin tin with cooking spray.

  2. In a mixing bowl, whisk together the eggs and milk until well combined.

  3. Stir in the grated cheese, diced vegetables, salt, and pepper.

  4. Pour the egg mixture evenly into the muffin tin, filling each cup about 2/3 full.

  5. Bake in the preheated oven for 15-20 minutes or until the frittatas are set and lightly golden on top.

  6. Remove from the oven and let them cool for a few minutes before removing them from the muffin tin.

  7. Serve warm or at room temperature.
